Mac n Cheese

Mac n Cheese is one of those ‘classics’ that everyone does differently.

This is one of my go-to’s. Simple, easy and delicious Mac n Cheese recipes.

Prep Time: 15 minutes
Cook Time: 35 minutes
You will need:
  • Supa Mama® kitchen foil
  • 500 g macaroni pasta
  • 2 1/4 cups full-cream milk
  • 2 large eggs, beaten
  • 1/4 cup sour cream or plain Greek yogurt
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt & pepper to taste
  • 2 tablespoons salted butter
  • 3 cups grated cheddar cheese
  • 1 cup grated shredded mature cheddar cheese
  • ½ cup grated parmesan or pecorino cheese
  • Fresh basil or parsley, for serving

Instructions:
  1. Preheat the oven to 200° C.
  2. In a large bowl whisk together the milk, eggs, sour cream, seasoning, salt and pepper.
  3. Bring a large pot of salted water to a boil & cook the pasta according to package directions until al dente. Drain.
  4. Add the pasta (while still warm), butter, mature cheddar cheese, parmesan and 2 cups cheddar cheese to milk mixture and stir well. Pour the pasta into a baking dish and cover with Supa Mama® kitchen foil. **You can use any square or rectangle ovenproof dish. I like to use my cast iron skillet for beautiful presentation!
  5. Bake for 25 minutes, then remove the foil and top bake with the remaining cheddar cheese. Return to the oven and bake another 10 minutes, until the cheese is melted. Switch the oven to broil and broil 2-3 minutes, until just a little crispy on top. WATCH CLOSELY.
  6. Serve the immediately topped with fresh herbs and black pepper. ENJOY the Mac n Cheese!
