IMMUNE-BOOSTING SOUP YOUR WAY!

There has never been a better time to boost your family’s immune system than now! A great, affordable way to do this is with this SUPA versatile “Mix and Match Veggie Soup” recipe, jam-packed with nutrients to set your family in good stead for the imminent winter months! You can make different versions of this soup by simply mixing and matching the ingredients below and stock your freezer in preparation for those especially-cold days! (This recipe below yields 10 cups of soup.)

Your Base Ingredients:

2 tablespoons olive oil
1 cup chopped onion
1 tablespoon minced garlic
3/4 cup diced carrot
1/2 cup diced celery
Salt
1 teaspoon dried oregano or thyme
1 tablespoon tomato paste
8 cups chicken- or vegetable stock, or water
Fresh herbs, such as parsley or basil for serving (optional).

Choose your Hard Veg:

2 cups of any of the below, peeled and diced. Choose from:

• Potatoes
• Parsnips
• Turnips
• Sweet potatoes

Choose your Quick-Cooking Veg:

2 cups of any of the below, chopped. Choose from:

• Green beans
• Broccoli
• Cauliflower
• Marrows
• Corn
• Peas

Choose your Grains and/or Pulses:

1 cups of any of the below:

• Swiss chard
• Spinach
• Kale

To Make:

1 – 2 cups of any of the below:

1. Heat oil over medium heat in a large pot. Add the onion, garlic, carrot, and celery. Season with salt and cook, stirring until the onion is translucent (roughly 3 minutes).
2. Add the oregano or thyme and tomato paste.
3. Add your broth and chosen starchy vegetables. Bring to a boil, then reduce to a simmer and cook for 5 minutes.
4. Add your chosen quick-cooking vegetables. Return to a boil, then reduce to a simmer and cook for another 5 minutes.
5. Add your grains and/or pulses and chosen leafy greens at the same time. Heat through.
6. Season with salt as desired and serve with your fresh herbs!
